He truly is a “chef scholar,” with two degrees from the Culinary Institute of America. Mitchell is the first African American Chef Instructor at the Culinary Institute of Charleston, and his work prioritizes the preservation of Southern ingredients and supporting South Carolina’s community of chefs. Chef Jamie Daskalis grew up in restaurants – her father owned and operated four restaurants in New York. Today, she is the brainchild behind the wildly popular Johnny D’s Waffles and Bakery. Daskalis is also passionate about serving her community. As the mother of a child with autism, she routinely hosts events to advocate for others and spread awareness of the condition.

Both Raffaele and Jason have used their talents as chefs to build fine dining destinations in small towns. Born in Milan, Raffaele Dall’Erta struck out on his career path at the tender age of 15, attending culinary school at Vallesana in Northern Lombardy. The rich traditions of family, food, and Italian culture are the foundation of his culinary ethos. He has worked in esteemed kitchens like The Far Duck in the UK and Per Se in New York. After an 11-year turn as sous chef at the Inn at Little Washington, he landed at Hamptons in Sumter in 2010. Chef Jason Tufts can thank his mama for his culinary career. As a high school student, he took a job washing dishes for a downtown Aiken restaurant, which gave him an inside look at the behind-the-scenes dynamics of a chef’s life. He honed his skills at the Doctors Hospital of Augusta, the Green Boundary Club, and the Woodside Plantation Country Club, both in Aiken. In 2017, he was named executive chef of Malia’s, one of the town’s most popular restaurant

The Executive Director of CHSWFF (Charleston Wine + Food Festival) joins us to talk about favorite memories from the 2020 festival, what the organization has planned for a virtual celebration in 2021, and how they're using this 'off' year to strategize on how to make future iterations of the festival more equitable, inclusive, and creative.

Myriam Hendrickx (Master Distiller for Rutte Gin and Food Scientist) and Kevin Joseph (Founder of New York Oyster Week) join us for cocktails and cold smoked oysters! Their collaboration for New York Oyster Week is a “Rutte Celery Gin with Celery Leaf Spirited Pearl” which involves a process of reverse osmosis to create a delicate membrane around Rutte Celery Gin. We welcome Ethan Frisch and Amy Rothstein to talk about how to maximize flavor in your spice cabinet and in your beverage repitoire. Ethan is the co-host of Why Food? and co-founder of Burlap & Barrel, a Public Benefit Corporation building new international food supply chains that are equitable, transparent and traceable. Amy Rothstein is the founder of Dona, a craft spice-based tea concentrates and soda company. Nick Perkins is the Chef/Co-Owner of the award-winning restaurants Hart’s and Cervo’s, as well as the recently opened wine bar, The Fly, in New York City. Aaron Crowder is Chef and Partner at Cervo’s in New York City where they specialize in cooking seafood inspired by Spain and Portugal. Inspired by the restaurant’s namesake, Brian has created The Mockingbird’s menu to mimic its surroundings, offering comfort food favorites influenced by the many global elements that make up American culture and cuisine. Both Brian and Mikey have backgrounds in food and art. Brian was born in Illinois, raised in Naples, Florida and has traveled the world entrenching himself in global cuisines and fine arts. Mikey, born and raised in Corpus Christi, Texas, was highly influenced by his Tex-Mexican family cooking, a staple in his home throughout his childhood. His background in graphic design as well as his flavorful upbringing is what adds such flare to The Mockingbird. They met in Chicago, where they began hosting pop-ups in their apartment. Mikey began signing Brian up for cooking competitions, which is how he ended up meeting Maneet Chauhan on Chopped. After establishing a friendship, Maneet convinced the couple to make the move to Nashville to team up on The Mockingbird.

Ronna Welsh joins us to talk about her beautiful and amazingly functional cookbook, The Nimble Cook, which encourages attentiveness, flexibility, and pragmatism in the home kitchen. With proper organization and outlook, you can learn to make food for any given moment, no matter what ingredients you have on hand, the number of people you aim to feed, and how little time you have to cook. Agave brought together three unlikely friends: Lou Bank, Jay Schroeder, and Salvador “Chava” Peribán. While they don't always see eye-to-eye, these three amigos are working together to help educate mezcal lovers on the world of artisanal agave spirits. Salvador “Chava” Peribán develops strategies and processes to achieve sustainable, fair, and beautiful products, including agave spirits, tumblers, and adobe bricks. He has worked as director of R&D at Xaquixe, a Oaxaca-based glass-blowing studio, and as head distiller at Sombra, where he also helped reduce the distillery’s ecological footprint. He’s currently immersed in a yet-to-be-revealed agave project in Mexico City.

"""It was November 2016 and I was freaking the fuck out. A lifetime of undiagnosed mental illness, and a few traumatic events culminated on election night, and I was broken."" This is the origin story of the Restaurant Workers' Community Foundation. As co-founder, John deBary writes, he was left stunned and with the ""recognition that those with privilege have a moral imperative to support marginalized people."" He decided to start with what he knew. He reached out to Alex Pemoulié, a former colleague at Momofuku, and they began brainstorming ways for the restaurant community to brace for the next four years. They hatched a plan to start a nonprofit to act as a hedge fund that would raise money, invest it, and use the returns fund progressive social change. deBary ran the idea by his husband Michael (who has spent his entire career in the philanthropic sector), who confirmed that their goals had much in common with the mission of many population-focused community foundations like Stonewall Community Foundation and New York Women’s Foundation. In late 2018, the Restaurant Workers' Community Foundation held an event to announce its launch as an advocacy and action nonprofit created by and for restaurant workers. By addressing quality-of-life issues that disproportionately affect restaurant workers – 40% of whom live on poverty-level wages – RSCF aims to strengthen the workforce and increase opportunities for advancement in the industry to more people. We're so honored to have John deBary (Co-Founder) and his husband Michael Remaley (Board Treasurer) on this episode of HRN Happy Hour. Art Pollard is Amano’s Founder and Head Chocolate Maker. Located high in Utah’s Wasatch Mountain range in the heart of the Rockies, Amano is dedicated to creating some of the world’s most exquisite chocolate through traditional techniques. Amano means “by hand” and “they love” in Italian, and that describes the care and perfection that Amano brings to chocolate and in turn to the people who savor it.

NASA Scientist and Pitmaster, Howard Conyers has had an epic year. He starred in the PBS Digital Series, NOURISH, in which he explored the people, culture, and science of food. Then, he accomplished one of his biggest goals: cooking a whole cow at the inagural Gumbo Jubilee. Recently, he was named one of Southern Living's Southerners of the Year alongside his fellow South Carolina pitmaster Rodney Scott. When he's not testing rocket engines at Stennis Space Center, Howard's passions are documenting the oral histories of Southern food experts.

Aaron Bludorn and Tim Hollingsworth, two of the chef stars of Netflix's The Final Table, join us in studio to talk about the new global culinary competition show. The series features 12 teams of two chefs from around the world cooking the national dishes of Mexico, Spain, England, Brazil, France, Japan, the U.S., India and Italy. The guests of the hour are Daniel Isengart and Francisco Migoya! Both men have combined a deep love of art with their culinary aspirations, and have truly unique perspectives on cooking, eating, and creating. Daniel Isengart is the author of The Art of Gay Cooking, a literary appropriation of The Alice B. Toklas Cookbook, that includes a foreword by Jeremiah Tower, the legendary Godfather of California Cuisine. Isengart was born in Munich, Germany and raised in France. Since his NYC stage debut in 1994 (in Tina Landau’s Stonewall – Night Variations), he has become a specialist in the intimate performance style of the cabaret genre. Francisco Migoya, head chef of Modernist Cuisine and co-author of Modernist Bread: The Art and Science, grew up in Mexico City surrounded by the cultures of his parents: Italian-American and Spanish. Chef Migoya’s first calling, however, was not culinary school but art school, where he planned on studying painting, drawing and sculpture. Encouraged by a friend, he acquired a staging position in a Mexico City hotel at age 16. Migoya quickly realized that the kitchen was where he belonged. Arran Gallagher is a fourth-grader at Jefferson Elementary School in Maplewood, NJ. His favorite band is Foo Fighters and he’s forgotten more about Metallica than you will ever know. He knows how to make toast a. Memorable food encounters include the time he shoved a raisin so far up his nose it had to be professionally removed (the raisin, not the nose).

Brad Farmerie is the executive chef at Saxon + Parole and PUBLIC in Manhattan. He joins the HRN Happy Hour crew to chat about Feast Portland, where he’ll be cooking at "80s vs. 90s," a team competition where half the chefs will represent the 80s and the other half the 90s in a throwback cook-off that’s guaranteed to knock your parachute pants off. We also get into Brad's personal culinary history – from cooking in a college town, to earning his “Grand Diplome” at Le Cordon Bleu, and then back stateside to New York City.

Rochelle Oliver is a food writer exploring the flavors that make island cuisine (and culture) so unique. She was recently a guest on A Taste of the Past, where she took host Linda Pelaccio all the way back to the 1500’s to learn about the origins of the favorite Jamaican food preparation – Jerk. We welcome Rochelle to talk about her upcoming projects and play some Caribbean-inspired celebrity and food trivia.

Jenny Goodman and Alex McCrery are the co-founders of Tilit. Alex is a chef turned designer, and Jenny worked in restaurant FOH and is now Tilit’s COO. They founded Tilit with two chef aprons designs, one pair of pants and a chef-shirt. The idea was that each garment would be made in the center of NYC's garment district by restaurant industry folks, and they still make over 90% of our garments there. They also have a retail store in the Lower East Side open every weekday.

Grace Weitz is a craft beer enthusiast and writer for Hop Culture Magazine. She recently completed the Food Studies Master Program at NYU, and she's one of the women behind Beers With(out) Beards, a celebration of women in the beer industry. The ticketed tasting festival will be held at The Well in Brooklyn, NY, on Saturday August 11th, and will feature 20+ women-owned breweries or breweries helmed by female brewers.

Somebody Feed Phil is back! Netflix is releasing new episodes of the globetrotting show on Friday, July 6th. We welcomed the star of the show, Phil Rosenthal to HRN Happy Hour to talk about his season two destinations: New York, Buenos Aires, Ireland, South Africa, Venice, and Copenhagen.

It's Thursday at 5:00 and though Kat is unable to join Caity in the studio this week, she is there in spirit, since our two guests are also Alabama natives. Brian Hart Hoffman is the creative force behind a media company that publishes magazines, including Bake from Scratch. Today, Brian brings his good pal and frequent collaborator Julie Tanous, a recipe developer and co-creator of Julie and Jessie, a blog created by her and Modern Family actor Jesse Tyler Ferguson.

Rodney Scott is the first African-American to win the James Beard Foundation Award for Best Chef Southeast and only the second barbecue cook to win a chef award from the JBF. He joins the HRN Happy Hour crew to talk about his much-deserved recognition, how Rodney Scott BBQ in Charleston is doing one year in, and plans for expansion to Birmingham, Alabama.
