This episode was produced in partnership with Discover South Carolina and Charleston Wine + Food. This week on HRN Happy Hour, we’re learning about South Carolina’s culinary scene from the people who know it best: its Chef Ambassadors! He truly is a “chef scholar,” with two degrees from the Culinary Institute of America. Mitchell is the first African American Chef Instructor at the Culinary Institute of Charleston, and his work prioritizes the preservation of Southern ingredients and supporting South Carolina’s community of chefs. Chef Jamie Daskalis grew up in restaurants – her father owned and operated four restaurants in New York. Today, she is the brainchild behind the wildly popular Johnny D’s Waffles and Bakery. Daskalis is also passionate about serving her community. As the mother of a child with autism, she routinely hosts events to advocate for others and spread awareness of the condition.

This episode was produced in partnership with Discover South Carolina and Charleston Wine + Food. This week on HRN Happy Hour, we’re learning about South Carolina’s culinary scene from the people who know it best: its Chef Ambassadors! Meet Raffaele Dall’Erta and Jason Tufts, of Sumter and Aiken, respectively. They discuss the people, culture, ingredients, and relationships that make South Carolina’s food scene so dynamic. Both Raffaele and Jason have used their talents as chefs to build fine dining destinations in small towns. Born in Milan, Raffaele Dall’Erta struck out on his career path at the tender age of 15, attending culinary school at Vallesana in Northern Lombardy. The rich traditions of family, food, and Italian culture are the foundation of his culinary ethos. He has worked in esteemed kitchens like The Far Duck in the UK and Per Se in New York. After an 11-year turn as sous chef at the Inn at Little Washington, he landed at Hamptons in Sumter in 2010. Chef Jason Tufts can thank his mama for his culinary career. As a high school student, he took a job washing dishes for a downtown Aiken restaurant, which gave him an inside look at the behind-the-scenes dynamics of a chef’s life. He honed his skills at the Doctors Hospital of Augusta, the Green Boundary Club, and the Woodside Plantation Country Club, both in Aiken. Fri, 12 Mar 2021 - 49min - 130 - Presenting Fields Episode 1: Seeds and Time Travel
On this episode of HRN Happy Hour we're thrilled to present the first episode of one of HRN's newest shows: Fields. Fields brings you the stories of people who are working in urban agriculture—for money, for fun, to feed the hungry, and for entirely other reasons. In each episode, hosts Melissa Metrick and Wythe Marschall delve into different foods grown in cities. Moreover, we investigate the whys behind getting up in the morning and working as a farmer in the shadow of skyscrapers. You don’t need to be a farmer to enjoy this podcast, or even a foodie! With their expert guests, Melissa and Wythe break down the realities and possible futures of urban farming to their elements. So, how are seeds gender-defying time travelers? Subscribe to Fields and find out! In our first story, Melissa and Wythe talk to plant-focused artists Ellie Irons and Anne Percoco of the Next Epoch Seed Library and to Ken Greene, expert seed breeder and seed librarian. We explore how different seeds travel across time and space—sometimes becoming “invasive” “weeds,” and sometimes disappearing from human cultivation. Anne and Ellie are working to help all of us, especially those of us in big cities, rethink our relationships to the plants traveling all around us, to our neglected environments, to our politicized borders, and to the world’s rapidly changing climate. Ken is working with indigenous leaders to grow, save, and return—without keeping—sacred seeds. We talk about organic seeds, the ethics of growing, and farming while queer. We learned so much from our first guests, and we know you will, too!

Fri, 30 Oct 2020 - 55min - 128 - Presenting: The Big Food Question
This week, we're presenting the third episode of HRN's newest show: The Big Food Question. How can our food system rebuild and reimagine amid the unprecedented crisis of COVID-19 and a long overdue reckoning with generations of inequity? As every corner of the food world grapples with issues that will define its future, The Big Food Question will tackle practical and philosophical questions alike for eaters, operators, and workers across food business sectors and topics. From restaurants and bars, to processors and distributors, from farms to food banks, The Big Food Question will feature expert guests who help us understand how industries can move forward while prioritizing safety, equity, and economic stability. In this episode Sother Teague shares his detailed playbook for re-opening his East Village bar with indoor seating when the time comes. He expects he will only be allowed 8 guests at a time - less than half his normal capacity. Taking into consideration capital, staffing and safety he has laid out a reservation system that he believes will decrease points of contact, provide enough revenue to stay afloat, and establish high hygiene standards. The question remains however, when he will set the plan into motion. Sother also recommends viewing the resources available at www.barmagic.com/relief. Thu, 14 Mar 2019 - 47min - 78 - Episode 78: Restaurant Workers’ Community Foundation
"""It was November 2016 and I was freaking the fuck out. A lifetime of undiagnosed mental illness, and a few traumatic events culminated on election night, and I was broken."" This is the origin story of the Restaurant Workers' Community Foundation. As co-founder, John deBary writes, he was left stunned and with the ""recognition that those with privilege have a moral imperative to support marginalized people."" He decided to start with what he knew. He reached out to Alex Pemoulié, a former colleague at Momofuku, and they began brainstorming ways for the restaurant community to brace for the next four years. They hatched a plan to start a nonprofit to act as a hedge fund that would raise money, invest it, and use the returns fund progressive social change. deBary ran the idea by his husband Michael (who has spent his entire career in the philanthropic sector), who confirmed that their goals had much in common with the mission of many population-focused community foundations like Stonewall Community Foundation and New York Women’s Foundation. In late 2018, the Restaurant Workers' Community Foundation held an event to announce its launch as an advocacy and action nonprofit created by and for restaurant workers. By addressing quality-of-life issues that disproportionately affect restaurant workers – 40% of whom live on poverty-level wages – RSCF aims to strengthen the workforce and increase opportunities for advancement in the industry to more people. We're so honored to have John deBary (Co-Founder) and his husband Michael Remaley (Board Treasurer) on this episode of HRN Happy Hour.
